        Taco soup is great for a " cold winter night in place of regular Taco's for Taco Tuesday " !   And if you like the flavor of tacos you will most surely like this soup !

For another taste of " Ole Mexico " you can also try my:

Ingredients:

  •   2  -  16 oz. can of Pinto Beans  -  ( We use Bush's Pinto Beans - Pictured below )
             ( The smaller Pinto Beans are " better for kids " since they are smaller then Kidney Beans - and we prefer them as well )

  •   1  -  8 oz. can of Tomato Sauce

  •   1  -  3.8 oz. can of sliced black olives

  •   1  -  15 oz. can of whole kernel corn  -  ( " optional " and we don't add it )

  •   4  -  cups of water

  •   2  -  cans of diced tomatoes   -  ( undiluted ~ we use " petite diced tomatoes " )

  •   1  -  4 oz. can of diced green chilies  -  ( " optional " - we never include ! )  -  ( see Tip #1 )

  •   2  -  packages of taco seasoning

  •   Salt & Pepper  -  ( to taste )

  •   1  -  Tablespoon of Olive Oil

  •   1  -  medium onion, chopped

  •   1 to 2  -  lbs. of ground burger  -  ( your choice for the amount of meat but for taco soup " 2 lbs. " is the best option )  -  ( see Tip #2 )

  •   1  -  14 ozs. squeeze container of Sour Cream  -  ( " optional " - to squeeze into your own bowl of soup )

  •   1  -  package of shredded Taco seasoned Mexican cheese for topping  -  ( " optional " - or cheese of choice )

  •   1  -  bottle of Frank's Red Hot Original sauce  -  ( " optional " - for those that like to add the heat to tacos ! )

Directions:

  1.   Heat oil in a large skillet over medium-high heat  -  Brown beef & Onion and drain.

  2.   Combine cooked beef and the first " 9 " ingredients in slow cooker.

  3.   Cover and cook on low as noted below:  ( since basically everything added is already cooked )

    •   " 4 " hours to heat up for a quick meal .....

    •   " 6 " hours to develop more taste and flavor .....

  4.   Use shredded cheese and/or sour cream to top it off !

  5.   Then Enjoy !


             Most children don't like green chilies in their tacos ( and neither do I ) and that's why we always have some " Frank's Red Hot Sauce " around. ( For those that like the extra heat )


             Ground Turkey can also be use for a healthier meal " plus " its more tender than ground burger.   ( It's actually " extremely hard " to tell the difference between ground burger and ground turkey once cooked in this soup )
