         " Stuffed Acorn Squash " has become one of our " Fall Favorites " ..... I originally found this recipe a few years ago and since that time I've put my own spin on it to make it even more " Delicious " than the original !

" We think you'll enjoy it as well ! "


Ingredients:  ~  ( For making " 2 " servings - Double for 4 servings )

  •   1  ~  Fresh Acorn Squash - ( 1/2 of the squash per person )

  •   1/2  ~  Pound of ground sausage  -  ( see Tip #1 below )

  •   1/2  ~  Cup of shredded Monterey Jack Cheese  -  ( or cheese of choice )

  •   1/2  ~  Cup of finely chopped apples  -  ( We use Gala Apples )

  •   1  ~  Package of Uncle Ben's Microwave Ready Brown Rice - ( or rice of choice - photos shown below )

  •   2  ~  Teaspoons of crushed coriander seed

  •   2  ~  Teaspoons of Maple Syrup  -  ( " optional " but better included )

  •   2  ~  Tablespoons of Brown Sugar

  •   4  ~  Tablespoons of pre-softened butter - ( 2 Tablespoons per half )


Directions:

  1.   Slice squash in-half, remove all seeds, and then score as shown in the photo above.
      ( Be careful not to score to deeply and cut through the skin of the squash )

  2.   Smear the softened butter inside of the squash covering the bottom and sides.

  3.   Sprinkle the brown sugar into the squash and cover the bottom and sides.

  4.   Add the Maple Syrup into the squash.  -  ( If using )

  5.   Place the squash on a baking sheet and cook at 350o for 1 hour.

  6.   While the squash are baking cook the sausage in a frying pan until no longer pink and then drain.

  7.   Once the sausage is drained place it back into the same frying pan.

  8.   Then cook the rice in the microwave.

  9.   When the rice is cooked mix the rice, apples, and crushed coriander seed into the sausage.

  10.   Once the squash is cooked ( for 1 hour ) remove them from the oven and stuff them with the sausage mixture.

  11.   Then sprinkle them with the shredded cheese.

  12.   Place the squash back into the oven and cook for 15 more minutes and .....

                        


            We like to use " Turkey Sage Sausage " which is a little healthier since there is also a lot of butter in the recipe plus we can't tell it's even Turkey based on taste and it is much softer and more moist that pork sausage .....

            However you can use any pork sausage as well such as " Pork Sage Sausage, Plain Pork Sausage, sweet - mild - or even hot Italian sausage ".   We've even found out that " ground burger " is also a good option.
