        I originally found this recipe on the internet .... and of course added some of my own touches that I felt were necessary.   They are a " very good " potatoe side dish for sure !

        My wife and I have actually made these and had just them for " Dinner " !  ( of course we really like taters )   This recipe, however, is one that I'd suggest " always using a Slow Cooker Liner " cause it actually helps the taters not to get to crispy around the edges.  ( However if you like crispier taters then do it without the liner )   Our favorite way is to also peal them but that is just our personal preference ..... They are good peeled or unpealed for that matter.  ( for us the potato peels just get in the way - LOL )

Ingredients:

  •   3 - lbs. of Red or Russet potatoes  -  ( pealed or unpealed )  -  ( #1 )

  •   1/4 - cup of Extra Virgin Olive Oil

  •   1/4 - cup of Parmesan Cheese  -  ( grated or fresh shredded )

  •   3 - Teaspoons minced garlic  -  ( minced yourself or from a jar )

  •   1 - Teaspoon dried thyme  -  ( #2 )

  •   1 - Teaspoon dried oregano  -  ( #2 )

  •   1 - Teaspoon of seasoning salt  -  ( regular salt is also ok )

  •   1/2 - Teaspoon of pepper

  •   Cooking Spray or Slow Cooker Liner  -  ( like Pam for inside of slow cooker - " optional " )

Directions:

  1.   Cut the potatoes into wedges and place in the slow cooker.  -  ( see photo above )

  2.   In a small bowl mix together the olive oil, garlic, salt, pepper, thyme and oregano.

  3.   Pour the blend over the potatoes and stir.

  4.   Sprinkle the grated or shredded parmesan cheese over the top.

  5.   Cover and cook on " high " for 4 hours.  -  ( don't open lid during cooking )

  6.   Once they are done you can, If you'd like, sprinkle with additional cheese before serving.

  7.   Then Enjoy !


    ( #1 ) ~ The above photo shows 3 lbs. of potatoes quartered.  You can, for 2 or 3 folks, use half of the amount & then cook for only 3 hours .....

    ( #2 ) ~ Instead of using 1 teaspoon of thyme and 1 teaspoon of oregano you can also try " 2 teaspoons of dried mixed Italian seasoning " ( which is my favorite way ) .....
