          I originally found this recipe on the internet and felt it was something my wife would like  .....  and of course I made some modification to suit our taste buds !   It's quickly become, not only one of my wife's " Favorite Meals ", but one of mine also !   ( however I like it with gravy )    We hope you'll try it and like it as much as we do .....

Ingredients:

  •   2 - small " thin sliced " cooked Chicken Breasts  -  ( #1 )

  •   2 - eggs

  •   1 - package ( 6 oz. ) Stove Top Chicken Stuffing Mix  -  ( #2 )

  •   1 - cup of water

  •   1/4 - cup of finely chopped red or green pepper

  •   1 - tablespoon of " Minced Dried Onion "

  •   1/2 - cup of Mayo

  •   1 - Velveeta mini block ( 4 ozs. ) cut into 12 pieces  -  ( #3 )

  •   1 - jar of " Chicken Gravy "  -  ( optional )

Directions:

  1.   Cook " thin sliced " chicken breasts at 350 degrees for 30 minutes.
      Cook one side for 15 minutes and them flip and cook other side for 15 minutes.

  2.   Put dry minced onion in a bowl and add a little water to hydrate them

  3.   Preheat oven to 400 degrees.

  4.   Once the chicken is cooked and has " cooled a little " cut them up into tiny pieces.

  5.   Mix all ingredients ( except Velvetta cheese ) in a bowl until well blended.

  6.   Spray a 12 cup muffin ( cupcake ) pan with cooking spray.  -  ( #4 )

  7.   Spoon mixture evenly into the cups.

  8.   Push one Velveeta cube into the center of each cup and cover with mixture if possible.

  9.   Bake ( uncovered ) for 20 minutes.

  10.   Let them cool for about 5 minutes.

  11.   Serve .....
