There are alot of " Sweet Potato Casserole " recipes out there for sure ..... But this is the one my family raves about ! It includes " Mashed Sweet Potatoes with a topping of candied chopped pecans and marshmallows ".
It was a big hit at our last " Thanksgiving Dinner " and is actually great for Christmas Dinner or anytime of the year. I've even had family members who claim that they don't like " Sweet Potatoes " however after tasting these some of them all went back for a " second helping " !
- 5 ~ pounds of sweet potatoes - peeled and cut into 2 inch pieces
- 2 ~ Eggs, beaten
- 1 ~ cup of brown sugar
- 1 ~ teaspoon vanilla extract
- 1 ~ teaspoon of salt
- 1/2 ~ cup of butter ~ melted
- 1/2 ~ cup of heavy cream ~ or milk
- 1/2 ~ cup of brown sugar
- 1/2 ~ cup of flour
- 1/3 ~ cup of butter ~ melted
- 1 ~ cup of chopped pecans
- 3 - 4 ~ cup of mini marshmallows
- Potatoes can be boiled on the stove, cooked in a slow cooker, or even cooked in an Instant Pot ~ ( See Tip #1 ).
- Preheat oven to 375o and mash your cooked sweet potatoes in a bowl.
- Add beaten eggs, vanilla, 1/2 cup melted butter, brown sugar, salt, and milk ( or heavy cream ) and mix until smooth.
- Spread potato mixture in the bottom of a greased 9" × 13" baking dish.
- In another bowl combine brown sugar, flour, 1/3 cup melted butter, and pecans and mix well (with a spoon, not a mixer).
- Sprinkle mixture over potatoes (it's okay if potatoes aren't completely covered).
- Bake uncovered for about 20 - 30 minutes until pecans are caramelized.
- Remove from the oven and sprinkle marshmallows evenly over pecan mixture.
- Return to oven for another 5-7 minutes or until marshmallows are puffy and lightly browned.

- To cook potatoes in a " 4 quart slow cooker " ... add potatoes to the slow cooker and fill it with water ... cook on high for " 4 hours " or until the potatoes are soft. Then drain and place in a big bowl for mashing and proceed with the recipe as written.
- To cook potatoes in an " Instant Pot " ... add " 1 cup of water " to your Instant Pot and then add the potatoes. Cook for 10 minutes on high ... after the 10 minutes do a quick release, remove the lid, and drain and transfer to a bowl to mash and proceed with the recipe as written.
